Mustard greens and seed are used in
a wide
variety of cuisines. Hon Tsai Tai is used to make Achar
and Zha
Cai pickles. Mustard greens have a pungent
taste and are
frequently mixed with other greens for salads.
Meats are
sometimes used with these greens for combined flavor. Traditionally grown mustard are high in nutrients. A one cup serving has 348% of recommended daily Vitimin K; 84% of Vitimin A; 60% Vitimin C; 25% Folate; 15% Vitimin E; 12% Calcium; 10% Vitimin B6; 8% Vitimin B2; 7% Vitimin B1; 5% Vitimin B3. If grown for the purpose, Mustard can be used as a food suppliment for selenium, chromium, iron and zinc. "It is an excellent sauce for such whose blood wants clarifying, and for weak stomach, being an herb of Mars, but naught for choleric people, though as good for such as are aged, or troubled with cold diseases....Mustard seed hath the virtue of heat, discussing, ratifying, and drawing out splinters of bone, and other things of the flesh."
