- Amomum subulatum
(syn.
Amomum aromaticum)
Amomum is an herbaceous plant native to the East Indies
and parts
of China, a member of the ginger family, Zingiberaceae.
The plant is
cultivated in sub tropical climates and is used to produce black
cardamom, obtained from the dried seed pods. It
makes a lovely
and useful potted plant and is often used It
should not be
confused with green cardamom (or true cardamon) from the Elettaria
cardamomum plant.
Amomum is best grown in a rich well drained moist soil and is suited
for container culture. The plant spreads by forming rhizomes
which produce bright green lanceolate leaves to a height of about 36
inches. Creamy white blooms appear in dense clumps and are used
as filler material for arrangements. Blooms are followed by seed
pods.
Amomum is propagated by division of rhizomes or by sowing seed.
Seed
should be sown in pots or trays and kept moist, but not soggy
until germination. Transplant seedlings when
they reach about 2
inches in height to containers. Transplant to successively larger
containers as necessary.
Seeds are dried traditionally by roasting over a fire and
are
used to flavor meats and stews. They can be cooked whole in the
dish and removed prior to serving, or ground. They are a staple
ingredient in Chinese Shechuan cooking.
